- 2 cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 1 cup granulated white sugar
- 4 tablespoons unsalted butter (at room temperature)
- 2 large eggs
- 1½ cups mashed ripe banana (about 3 bananas)
- ⅓ cup plain low-fat yogurt
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chunks or chips
- 1 cup halved raspberries (tossed in 1 tablespoon all-purpose flour)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by spraying it with cooking spray.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a larger bowl, cream together the sugar and butter using an electric mixer until blended. Add the eggs one at a time, mixing well after each addition. Then add the mashed bananas, yogurt, and vanilla extract; mix until combined.
- Gradually stir in the dry ingredients until just moistened. Fold in dark chocolate chunks and halved raspberries.
- Pour batter into the prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
