Ingredients

Scale
  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated white sugar
  • 4 tablespoons unsalted butter (at room temperature)
  • 2 large eggs
  • 1½ cups mashed ripe banana (about 3 bananas)
  • ⅓ cup plain low-fat yogurt
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chunks or chips
  • 1 cup halved raspberries (tossed in 1 tablespoon all-purpose flour)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by spraying it with cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a larger bowl, cream together the sugar and butter using an electric mixer until blended. Add the eggs one at a time, mixing well after each addition. Then add the mashed bananas, yogurt, and vanilla extract; mix until combined.
  4. Gradually stir in the dry ingredients until just moistened. Fold in dark chocolate chunks and halved raspberries.
  5. Pour batter into the prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
