- 1/2 cup granulated sugar (for topping)
- 1/2 cup brown sugar
- 1/4 teaspoon ground cinnamon (for topping)
- 1/3 cup pecans (chopped)
- 1 1/2 cups hot water
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
- In a medium bowl, sift together all-purpose flour, whole wheat flour, baking powder, granulated sugar, salt, and spices.
- In another bowl, mix pumpkin puree, milk, melted butter, and vanilla until well combined.
- Gradually stir wet ingredients into dry ingredients until just combined; pour into the prepared dish.
- In a small bowl, combine sugars and cinnamon; fold in chopped pecans and sprinkle over the batter. Pour hot water gently over the topping without stirring.
- Bake for about 40 minutes or until the center sets. Let cool for 5 minutes before serving.
