Ingredients
- 4 large ripe plantains
- 1 lb ground beef
- 2 cups dairy-free cheese
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- 1 cup tomato sauce
- 3 large eggs (beaten)
- Coconut oil for frying
Instructions
- Preheat oven to 356°F (180°C).
- Grease a casserole dish; set aside.
- In a bowl, season ground beef with adobo and sazon. Mix well.
- Sauté onion, garlic, and bell pepper in coconut oil until soft. Add cilantro and ground beef; cook until browned.
- Stir in tomato sauce and olives/capers; let simmer for 5-10 minutes.
- Prepare plantains by peeling and slicing into strips. Fry in coconut oil until golden brown.
- Layer plantains in the casserole dish, brush with egg wash, then add a layer of ground beef and sprinkle cheese.
- Repeat layers until all ingredients are used, finishing with plantains and egg wash on top.
- Bake for about 20 minutes or until golden brown.
