  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 cups dairy-free cheese
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • 1 cup tomato sauce
  • 3 large eggs (beaten)
  • Coconut oil for frying

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish; set aside.
  3. In a bowl, season ground beef with adobo and sazon. Mix well.
  4. Sauté onion, garlic, and bell pepper in coconut oil until soft. Add cilantro and ground beef; cook until browned.
  5. Stir in tomato sauce and olives/capers; let simmer for 5-10 minutes.
  6. Prepare plantains by peeling and slicing into strips. Fry in coconut oil until golden brown.
  7. Layer plantains in the casserole dish, brush with egg wash, then add a layer of ground beef and sprinkle cheese.
  8. Repeat layers until all ingredients are used, finishing with plantains and egg wash on top.
  9. Bake for about 20 minutes or until golden brown.
