  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1 cup kunafa dough (shredded phyllo)
  • 2 tbsp melted butter (for kunafa layer)
  • 2 tbsp sugar syrup (for kunafa layer)
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated and brown sugars, eggs, and vanilla until smooth. Stir in cocoa powder, flour, and salt until just combined.
  3. Pour the brownie batter into the prepared pan and smooth it out evenly.
  4. In another bowl, mix kunafa dough with melted butter and sugar syrup until fully coated. Press this mixture over the brownie batter evenly.
  5. Bake for 30–35 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  6. Allow brownies to cool completely before slicing into squares and topping generously with chopped pistachios.
