  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt together.
  3. In another bowl, blend peanut butter and softened butter until smooth. Gradually mix in sugar, followed by eggs one at a time and vanilla extract.
  4. Alternate adding the dry ingredients and milk to the wet mixture until just combined.
  5. Divide batter between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  6. For frosting, beat peanut butter and softened butter until smooth; gradually add powdered sugar and milk until creamy.
  7. Assemble by placing one cake layer on a serving plate, spreading jelly on top followed by frosting. Add the second layer and frost the top and sides.
