- 3 cups plain flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup smooth peanut butter
- 3/4 cup seedless strawberry jam
Instructions
- Preheat your oven to 200°C (400°F) and line a muffin pan with cases.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In another bowl, mix eggs and sugar until light; add buttermilk, oil, vanilla, and peanut butter until combined.
- Gradually fold in dry ingredients until just mixed.
- Fill muffin cases halfway with batter, add a teaspoon of jam in the center, then top with remaining batter.
- Swirl some additional jam on top before baking.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Cool in the pan for about 5-10 minutes before transferring to a wire rack.
