  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup smooth peanut butter
  • 3/4 cup seedless strawberry jam

Instructions

  1. Preheat your oven to 200°C (400°F) and line a muffin pan with cases.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, mix eggs and sugar until light; add buttermilk, oil, vanilla, and peanut butter until combined.
  4. Gradually fold in dry ingredients until just mixed.
  5. Fill muffin cases halfway with batter, add a teaspoon of jam in the center, then top with remaining batter.
  6. Swirl some additional jam on top before baking.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for about 5-10 minutes before transferring to a wire rack.
