Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- Sift together almond flour and powdered sugar twice in a bowl.
- In another bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
- Gently fold the dry ingredients into the whipped egg whites until fully combined.
- Pipe small circles onto prepared baking sheets and let rest for about 30 minutes.
- Bake for 15-18 minutes until firm yet slightly soft; cool completely before handling.
- Whip heavy cream with powdered sugar and vanilla; fold in pureed peaches to create the filling.
- Assemble macarons by sandwiching peach filling between two shells.
