- 2 sheets puff pastry
- 2 cups blackberries
- ½ cup water
- 1 tablespoon lemon juice
- ¾ cup sugar
- 8 ounces goat cheese
- 2 lemons, zested
- 4 teaspoons raw sugar
- 2 teaspoons fresh thyme, minced
- 1 egg
Instructions
- Prepare the blackberry jam by combining blackberries, water, lemon juice, and sugar in a saucepan; cook until thickened (20-30 minutes). Smash berries and cool.
- Thaw puff pastry for 20-25 minutes; roll each sheet into a rectangle on a floured surface.
- Spread goat cheese on one half of each sheet; top with cooled blackberry jam. Cut into strips, fold in half, and twist.
- Preheat oven to 400°F (200°C). Place twists on parchment-lined baking sheet, brush with egg wash, sprinkle with lemon-thyme sugar, and bake for 16-18 minutes until golden.
