- 6 tbsp unsalted butter
- 1/2 cup light brown sugar
- 1/8 cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 3/4 cup + 2 tbsp all-purpose flour
- 1/2 tsp fine sea salt
- 1/2 tsp baking soda
- 4 Oreos (chopped)
- 4 tbsp unsalted butter (for the brownie layer)
- 1/3 cup semi-sweet chocolate chips
- 1/4 cup + 1/8 cup granulated sugar (for brownie layer)
- 1 large egg (for brownie layer)
- 1 tsp vanilla extract (for brownie layer)
- 1/4 cup all-purpose flour (for brownie layer)
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp fine sea salt (for brownie layer)
Instructions
- Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
- In a mixing bowl, cream together butter, light brown sugar, and granulated sugar until fluffy. Mix in egg yolk and vanilla extract.
- Fold in flour, salt, baking soda, and chopped Oreos until just combined. Set aside.
- In another bowl, melt butter with chocolate chips until smooth. Let cool slightly.
- Whisk together remaining sugar, egg, and vanilla extract until fluffy; then mix in melted chocolate mixture.
- Fold in flour, cocoa powder, and salt until combined.
- Assemble by alternating spoonfuls of cookie and brownie batter in the prepared pan, topping with extra chopped Oreos.
- Bake for about 25-27 minutes or until golden brown on top.
