Ingredients

  • 1 lemon (zest and juice of)
  • 1/3 cup water
  • 4 cups granulated sugar

Instructions

  1. Wash the oranges and lemon thoroughly and scrub the peels.
  2. Cut off the ends of the oranges; slice each in half, then quarters—discard any seeds.
  3. Place chopped oranges in a food processor and pulse until finely chopped.
  4. Transfer pureed oranges to a large saucepan over medium heat; zest and juice the lemon into the pot, adding water and sugar.
  5. Bring the mixture to a boil, reduce heat for a low boil, and simmer for 30-35 minutes while stirring often until thickened.
  6. To test doneness, drop a spoonful onto a cold plate—it should gel slightly but still move.
  7. Pour into jars or containers after cooling at room temperature.
