- 2.0 to 2.3 pounds oranges (about 4 medium)
- 1 lemon (zest and juice of)
- 1/3 cup water
- 4 cups granulated sugar
Instructions
- Wash the oranges and lemon thoroughly and scrub the peels.
- Cut off the ends of the oranges; slice each in half, then quarters—discard any seeds.
- Place chopped oranges in a food processor and pulse until finely chopped.
- Transfer pureed oranges to a large saucepan over medium heat; zest and juice the lemon into the pot, adding water and sugar.
- Bring the mixture to a boil, reduce heat for a low boil, and simmer for 30-35 minutes while stirring often until thickened.
- To test doneness, drop a spoonful onto a cold plate—it should gel slightly but still move.
- Pour into jars or containers after cooling at room temperature.
