- 1 cup all-purpose flour

- ¼ tsp allspice
- ¼ tsp cloves
- ¼ tsp nutmeg
- ¼ tsp salt
- ½ cup unsalted butter, melted
- ¾ cup brown sugar, packed
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 1½ cups old-fashioned oats
- ⅔ cup chopped pecans
Instructions
- Preheat your oven to 350°F (176°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, allspice, cloves, nutmeg, and salt.
- In another bowl, whisk melted butter and brown sugar until smooth; then add the egg and vanilla extract.
- Gradually sift the dry ingredients into the wet mixture and stir gently until just combined. Fold in oats and chopped pecans.
- Chill the dough in the refrigerator for about 15 minutes.
- Scoop dough onto prepared baking sheets and space them apart.
- Bake for 12-15 minutes until slightly golden on the bottom but under-baked in the center. Cool on wire racks before serving.
