Ingredients
- 1 cup butter
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- Line an 8-inch or 9-inch square baking dish with parchment paper.
- In a large saucepan over medium heat, melt the butter with brown sugar until dissolved; stir in the vanilla.
- Add rolled oats, reduce heat to low, and cook while stirring for about 3-4 minutes until well blended.
- Pour half the oat mixture into the prepared dish and press down evenly.
- Melt peanut butter and chocolate chips in a microwave-safe bowl using short bursts; stir until smooth.
- Spread the chocolate mixture over the base layer and top with reserved oat mixture; drizzle remaining chocolate on top.
- Chill in the refrigerator for at least 2-3 hours before cutting into squares.
