- 1.5 lbs chicken (boneless skinless breasts, bite-sized)
- 4 tbsp soy sauce
- 2 tbsp olive oil
- 2 cups pineapple (tidbits or chunks)
- 1 bell pepper (cut into chunks)
- 1/2 cup onion (diced)
- 1 tbsp minced garlic
- 3 tbsp brown sugar
- 2/3 cup pineapple juice
- 1 1/4 cups chicken broth
- 2 tbsp cornstarch
Instructions
- Sauté diced onion in olive oil using the Ninja Foodi until soft, then add chicken and cook until no longer pink.
- Stir in minced garlic, ginger powder, red pepper flakes, and salt.
- Add soy sauce, brown sugar, pineapple juice, and chicken broth; mix well.
- Incorporate pineapple and bell pepper; combine thoroughly.
- Seal the lid and pressure cook on high for 6 minutes; release steam quickly.
- In a bowl, mix cornstarch with water until smooth; stir into the pot to thicken the sauce.
- Serve over rice or quinoa and enjoy!
