Ingredients
- 1 cup cooked chickpeas
- 2 large carrots, grated
- 1 small red onion, finely chopped
- 1 clove garlic, minced
- cup olive oil
- Juice of 1 lemon
- 1 tsp ground cumin
- 1 tsp ground coriander
- tsp paprika
- tsp cinnamon
- Salt and pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- In a large mixing bowl, combine cooked chickpeas, grated carrots, red onion, and minced garlic.
- In a separate small bowl, whisk together olive oil, lemon juice, ground cumin, ground coriander, paprika, cinnamon, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently until well coated.
- Allow the salad to rest for about 15 minutes to enhance flavor melding.
- Just before serving, sprinkle with chopped parsley and toss gently again.
