  • ½ cup heavy cream
  • ¼ cup vegetable broth
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp butter
  • 1 sheet puff pastry, thawed
  • 1 cup Gruyère cheese, grated

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, melt butter and sauté mushrooms until golden brown (5-7 minutes). Add minced garlic in the last minute.
  3. Stir in heavy cream and vegetable broth; add thyme, salt, and pepper. Simmer for about 5 minutes until thickened.
  4. Roll out puff pastry on a floured surface and cut into squares fitting over ramekins.
  5. Fill ramekins with mushroom mixture and top with grated Gruyère. Cover with pastry squares.
  6. Bake for 20-25 minutes until golden brown.
