  • 8 oz pasta (rotini or penne)
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 jalapeño, seeded and diced (optional)

Instructions

  1. Cook the pasta in a large pot according to package instructions until al dente. Drain and cool.
  2. If using fresh corn, boil or grill until tender; if using canned/frozen, drain or thaw as needed.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, paprika, garlic powder, salt, and pepper until smooth.
  4. Combine cooled pasta, corn kernels, cilantro, diced red onion, and jalapeño in the bowl with the dressing. Toss well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
