  • 2 cups broth (chicken or vegetable)
  • 1 teaspoon turmeric
  • Salt to taste
  • 3 tablespoons parsley (chopped)
  • Zest of 1 lemon
  • 3–4 tablespoons lemon juice

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Sauté diced onion for about 2 minutes until softened, then add minced garlic and cook for an additional 2 minutes until fragrant.
  2. Stir in turmeric and salt, ensuring even distribution.
  3. Add the rice, stirring continuously until it becomes mostly translucent.
  4. Pour in both broth and water; cover and bring to a simmer. Reduce heat to low and cook for approximately 12 minutes or until all liquid is absorbed.
  5. Remove from heat but keep covered for 10 minutes to allow flavors to meld.
  6. Uncover and fluff the rice with a fork before stirring in lemon zest, lemon juice, and chopped parsley.
