- 2 cups rice (basmati or other long, medium, or short-grain rice)
- 1 cup water
- 2 cups broth (chicken or vegetable)
- 1 teaspoon turmeric
- Salt to taste
- 3 tablespoons parsley (chopped)
- Zest of 1 lemon
- 3–4 tablespoons lemon juice
Instructions
- In a large saucepan, heat olive oil over medium heat. Sauté diced onion for about 2 minutes until softened, then add minced garlic and cook for an additional 2 minutes until fragrant.
- Stir in turmeric and salt, ensuring even distribution.
- Add the rice, stirring continuously until it becomes mostly translucent.
- Pour in both broth and water; cover and bring to a simmer. Reduce heat to low and cook for approximately 12 minutes or until all liquid is absorbed.
- Remove from heat but keep covered for 10 minutes to allow flavors to meld.
- Uncover and fluff the rice with a fork before stirring in lemon zest, lemon juice, and chopped parsley.
