  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground chicken and cook until browned (6-8 minutes), breaking it apart as it cooks.
  3. Stir in chopped onion and minced garlic; sauté until onions are translucent (2-3 minutes).
  4. Incorporate bell pepper, oregano, smoked paprika, cumin, salt, and pepper; cook until the bell pepper softens (3-4 minutes).
  5. Add cherry tomatoes and olives; mix well and cook for another 5 minutes.
  6. Sprinkle crumbled feta on top; allow it to melt slightly before removing from heat.
  7. Stir in fresh parsley and lemon juice; adjust seasoning if needed. Serve warm.
