  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • Olive oil
  • 2 tablespoons dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and season with oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Mix well.
  4. Spread the mixture evenly in the prepared baking dish and top with mozzarella and Parmesan cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10–15 minutes until cheese is golden brown.
  6. Garnish with fresh parsley before serving.
