Ingredients
- 3 tablespoons olive oil
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté diced onion until translucent (about 5 minutes).
- Add minced garlic and cook for an additional 30 seconds before removing from heat.
- In a mixing bowl, combine sautéed onion and garlic with chopped spinach and ground chicken.
- Add breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
- Shape the mixture into approximately eight patties about ½ inch thick.
- In the same skillet, heat remaining olive oil over medium heat and cook each patty for about 5-6 minutes on each side until golden brown and cooked through.
- Drain on paper towels to remove excess oil and serve warm.
