- 1 1/2 cups vegetable stock
- 1/4 cup fresh dill, diced
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon sea salt (more to taste)
Instructions
- In a medium saucepan, heat olive oil over medium heat. Add diced onion and celery with salt; sauté until tender (about 4-5 minutes).
- Stir in basmati rice, ensuring it's well-coated with oil and vegetables. Pour in vegetable stock and lemon juice; bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 13-15 minutes or until liquid is absorbed and rice is tender. Remove from heat and let it steam for an additional 5-6 minutes while covered.
- Fold in fresh dill and lemon zest; adjust seasoning if necessary. Serve hot.
