Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup crumbled feta cheese (about 6 oz)
- 1/2 cup chopped sun-dried tomatoes
- 1/4 cup sliced olives (optional)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine feta cheese, sun-dried tomatoes, olives (if using), olive oil, garlic, oregano, salt, and pepper.
- Place salmon fillets in a baking dish, skin-side down; season with salt and pepper.
- Spoon the topping mixture evenly over each fillet.
- Cover with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 10 minutes until the salmon flakes easily with a fork.
- Garnish with fresh parsley before serving.
