Ingredients
- 1 slice whole grain or sourdough bread
- Ripe avocado
- 2 thick tomato slices
- 2 soft-boiled eggs
- Cup cucumber slices
- Cup feta cheese, cubed
- 46 olives (Kalamata + green)
- 1 tsp olive oil
- Fresh parsley or cilantro, chopped
- Salt & black pepper to taste
Instructions
- Toast the bread until golden brown.
- Mash the avocado in a bowl, seasoning with salt.
- Spread mashed avocado on the toasted bread and top with tomato slices and olive oil.
- Boil eggs for 7 minutes, then cool in ice water before peeling and halving.
- Assemble the plate by arranging the toast, eggs, cucumber slices, feta cheese, and olives.
- Garnish with fresh herbs and season to taste.
