  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 3-4 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt. Set aside.
  3. In a stand mixer, beat softened butter and brown sugar until fluffy. Add maple syrup and mix well.
  4. Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
  5. Gradually add dry ingredients until just combined. Mix in yogurt or sour cream before folding in nuts.
  6. Pour batter into the prepared loaf pan and top with reserved nuts. Bake for 50-60 minutes until a toothpick comes out clean. Drizzle warm maple syrup over the top as desired.
  7. Allow to cool before slicing.
