  • 1 cup white granulated sugar (divided)
  • 1 ½ tsp vanilla extract
  • ¼ cup whole milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • ½ cup heavy whipping cream
  • 1 cup heavy whipping cream (cold)
  • ¼ cup powdered sugar
  • ½ cup mango puree (about 1 large mango, plus more for drizzling on top (optional))
  • Fresh mango (peeled and cut into small chunks)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Beat egg yolks with half of the sugar until pale; add vanilla and whole milk.
  3. In another bowl, whisk flour, baking powder, and salt; gradually combine with wet ingredients.
  4. Whip egg whites until soft peaks form; gradually add remaining sugar, then fold into the batter.
  5. Pour into the prepared dish and bake for 25 minutes or until a toothpick comes out clean; cool completely.
  6. Mix sweetened condensed milk, evaporated milk, and heavy cream in a bowl.
  7. Poke holes in cooled cake; pour milk mixture evenly over it to soak.
  8. Whip cold heavy cream with powdered sugar and vanilla until soft peaks form; spread over the cake.
  9. Garnish with mango puree and fresh mango chunks before serving.
