Ingredients
- 1/2 cup Butter
- 1 cup Flour
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 cup Sugar
- 1 cup Buttermilk (or milk with lemon juice)
- 1 teaspoon Vanilla extract
- 21 oz can or homemade equivalent Lemon pie filling
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, melt the butter and let it cool slightly. Combine with flour, baking powder, salt, sugar, buttermilk, vanilla extract, and lemon extract if desired; whisk until just combined.
- Pour half of the batter into the prepared baking dish. Spoon the lemon pie filling over it evenly and then pour the remaining batter on top without stirring.
- Bake for about 55 minutes or until golden brown and set.
- Let cool slightly before serving warm.
