  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk (for meatloaf)
  • 2 cups macaroni (uncooked)
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (for cheese sauce)
  • Seasonings: salt, pepper, paprika, dry mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, diced onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into the bottom of a greased baking dish.
  3. Bake the meatloaf layer for about 20 minutes.
  4. While it bakes, cook macaroni according to package instructions until al dente; drain.
  5. In a saucepan over medium heat, melt butter and stir in flour to form a roux. Gradually whisk in milk until thickened. Add seasonings and 1½ cups of cheese until melted.
  6. Stir cooked macaroni into the cheese sauce. Pour over the meatloaf layer and sprinkle with remaining cheese.
  7. Bake for an additional 25 minutes or until cheese is melted and bubbly.
