- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1/2 cup lemon curd
- 1/4 cup turbinado sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until fully combined.
- Scoop tablespoon-sized amounts of dough onto prepared baking sheets, spacing them about 2 inches apart. Make an indent in each cookie and fill with lemon curd.
- Bake for 12-15 minutes until lightly golden around the edges. Sprinkle turbinado sugar over warm cookies and caramelize using a kitchen torch or broiler.
