Ingredients
- 2 Bunches Curly Kale
- 1 Cup Croutons
- 1/2 Cup Freshly Grated Parmesan Cheese
- 1/4 Cup Olive Oil
- 1/4 Cup Lemon Juice
- 3 Cloves Garlic
- 1 Teaspoon Sea Salt
- 1/2 Teaspoon Black Pepper
Instructions
- Remove stems from the kale, wash thoroughly, and place in a large salad bowl.
- Massage kale with 1 teaspoon sea salt for 1β2 minutes until softened.
- Chop or crush croutons and add to the bowl.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, and black pepper.
- Pour dressing over the kale along with grated parmesan and toss well.
- Serve immediately or store in an airtight container for up to 3 days.
