Instructions
- In a large bowl, whip together heavy cream, vanilla extract, and powdered sugar until stiff peaks form. Set aside.
- In another bowl, beat softened cream cheese with lemon curd until smooth.
- Gently fold the whipped cream into the lemon mixture until just combined.
- Layer the lemon fluff and smashed raspberries in individual jars or serving dishes.
- Garnish with extra raspberries and mint leaves. Chill until ready to serve.
