Instructions

- Make the cream filling: Whisk together heavy cream, lemon juice, zest, sugar, cornstarch, milk, egg yolks, and vanilla in a bowl. Heat gently until thickened; cool completely.
- Assemble: Once cooled, fill each eclair with the cream filling and top with fresh raspberries.
- Serve: Dust with powdered sugar mixed with lemon juice before enjoying.
