Instructions
- In a mixing bowl, whip 1 cup of heavy cream until soft peaks form using an electric mixer.
- In another bowl, combine 1 cup mascarpone cheese, 1/2 cup powdered sugar, 1/4 cup fresh lemon juice, zest of 1 lemon, 1 teaspoon vanilla extract, and a pinch of salt. Mix until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Transfer to serving cups or a large bowl and refrigerate for at least 2 hours to set.
- Before serving, garnish with fresh berries and mint leaves.
