- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 (8-ounce) package cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- ¼ cup fresh lemon juice
- Zest of 1 lemon
- 1 teaspoon baking powder
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, and sugar; press into a springform pan. Bake for 10 minutes and cool.
- In a bowl, beat cream cheese and sugar until smooth. Add vanilla, eggs (one at a time), sour cream, lemon juice, zest, and baking powder; blend well.
- Pour filling over cooled crust. Bake for approximately 50–60 minutes until set but slightly jiggly in the center.
- Turn off oven and let cool inside for an hour. Refrigerate for at least four hours or overnight before serving.
