  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup frozen wild blueberries
  • 1/2 cup white granulated sugar (for coating)
  • 2 tsp lemon zest (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add lemon zest, lemon juice, vanilla extract, and egg; mix until combined.
  4. In another bowl, sift together flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Gently fold in the frozen blueberries using a spatula.
  6. Scoop dough onto the prepared baking sheet about 2 inches apart. Roll each ball in a mixture of sugar and lemon zest before placing it on the sheet.
  7. Bake for about 17 minutes or until the edges are lightly golden. Let cool on wire racks before serving.
