- 1 cup unsalted butter (softened)
- 1 1/4 cups white granulated sugar
- 1/4 cup light brown sugar
- 1 tbsp lemon zest
- 1 large egg
- 1 tbsp lemon juice (fresh)
- 2 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup frozen wild blueberries
- 1/2 cup white granulated sugar (for coating)
- 2 tsp lemon zest (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add lemon zest, lemon juice, vanilla extract, and egg; mix until combined.
- In another bowl, sift together flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in the frozen blueberries using a spatula.
- Scoop dough onto the prepared baking sheet about 2 inches apart. Roll each ball in a mixture of sugar and lemon zest before placing it on the sheet.
- Bake for about 17 minutes or until the edges are lightly golden. Let cool on wire racks before serving.
