- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder

- 1 1/4 cups vanilla yogurt
- 1 cup sugar
- 3 large eggs
- 1/3 cup canola oil
- 2 teaspoons grated lemon zest
- 1 teaspoon pure vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, sift together flour, baking powder, and salt.
- In another bowl, whisk together yogurt, sugar, eggs, canola oil, lemon zest, and vanilla until combined.
- Add dry ingredients to wet mixture and stir until smooth.
- Toss blueberries in flour and gently fold into batter.
- Pour batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
- While baking, prepare the glaze by mixing lemon juice with sugar and powdered sugar until smooth.
- Cool in the pan for 10 minutes before transferring to a wire rack; drizzle glaze over the warm bread.
