  • ½ cup giant couscous
  • 2 cups cooked turkey or chicken
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp chopped parsley

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Sauté chopped onion, celery, carrots, and garlic with thyme for about 5 minutes until softened.
  2. Pour in the chicken stock and add cooked turkey, bay leaves, salt, and pepper. Bring to a boil.
  3. Stir in giant couscous and cook for about 10 minutes over medium heat until tender.
  4. Remove from heat, sprinkle with chopped parsley, and serve hot.
