- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1/2 tsp baking soda
- 1 cup buttermilk
- 1/4 cup lime juice
- 1 tsp lime zest
Instructions
- Preheat your oven to 325°F (165°C). Grease and flour a 10-inch tube pan.
- Cream together the butter and sugar in a large bowl until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- In another bowl, combine flour and baking soda. Gradually add to the creamed mixture alternating with buttermilk.
- Stir in lime juice and zest until evenly mixed.
- Pour batter into the prepared pan, spreading evenly.
- Bake for 60-70 minutes until a toothpick inserted comes out clean.
- Allow to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.
