- 4 chicken thighs, boneless and skinless
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 mango, diced
- 2 cups cabbage, shredded
- 1 red bell pepper, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Coat chicken thighs with jerk seasoning and olive oil.
- Grill chicken for 6-7 minutes per side until cooked through (165°F internal temperature).
- In a bowl, combine diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro; toss gently.
- Whisk together mayonnaise, honey, lime juice, salt, and pepper until smooth.
- Mix the honey lime dressing into the slaw until evenly coated.
- Slice grilled chicken and serve over the mango slaw.
- Drizzle extra honey lime cream on top if desired.
