- 2 yellow peaches (pitted, sliced)

- 2 pounds boneless, skinless chicken thighs
- 1 medium jalapeno pepper (thinly sliced)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- 2 tablespoons extra virgin olive oil
Instructions
- Prepare the glaze by mixing sliced peaches, peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes in a bowl until well combined.
- Season the chicken thighs with kosher salt, black pepper, and chili powder on both sides.
- Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-8 minutes per side until browned and cooked through.
- Pour the glaze over the chicken and add sliced jalapenos. Simmer for an additional 5 minutes until the glaze thickens slightly.
- Serve hot with your favorite sides.
