Instructions
- In a large mixing bowl, whisk egg whites and sugar until foamy.
- Add almond flour, orange zest, and fresh orange juice; mix until smooth.
- Form small balls with your hands or an ice cream scoop.
- Place on a parchment-lined baking sheet; create indents using your thumb.
- Fill each indent with orange marmalade.
- Chill cookies in the refrigerator for 15 minutes.
- Preheat oven to 175°C (356°F) and bake for about 12 minutes until slightly crispy outside.
- Cool completely on a rack before serving.
