Ingredients
- 4 large lemons
- 2 cups granulated sugar
- 1 cup water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Wash and dry lemons thoroughly. Zest the lemons using a zester or grater, avoiding the bitter pith. Juice the lemons and discard seeds.
- In a large pot, combine lemon juice, zest, sugar, and water. Stir until sugar dissolves completely.
- Bring the mixture to a boil over medium heat. Once boiling, reduce heat and let simmer for 30-40 minutes, stirring occasionally.
- Check for consistency by placing a small amount of jam on a cold plate; if it gels after cooling slightly, it's ready. If not, continue cooking for a few more minutes.
- Remove from heat and let cool slightly in the pot before pouring into sterilized jars.
