  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 14-ounce can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef chuck roast with salt and pepper; sear until browned on all sides. Remove from pot.
  3. In the same pot, add onion, carrots, celery, and garlic; cook until softened (about 5 minutes).
  4. Return the beef to the pot, then pour in the broth and crushed tomatoes. Add rosemary and thyme.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 3-4 hours or until tender.
  6. Shred beef using two forks and mix with sauce. Garnish with parsley before serving.
