  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 2 cloves garlic (minced)
  • 1 tbsp grated ginger
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 cups cooked rice (white or brown)

  • green onions (optional garnish)

Instructions

  1. Season chicken pieces with salt and pepper; dredge in flour.
  2. Heat oil in a skillet over medium-high heat; cook chicken until golden, about 3-4 minutes per side. Set aside.
  3. In the same skillet, sauté garlic until fragrant; add pineapple juice, soy sauce, and brown sugar. Simmer.
  4. Stir in pineapple chunks; whisk in cornstarch mixture to thicken.
  5. Return chicken to skillet; coat with sauce and simmer for another 2 minutes.
  6. Serve over cooked rice.
