- 1 cup plain flour
- 1/2 cup cocoa powder, unsweetened
- 1 teaspoon baking soda
- 1/2 teaspoon salt (fine sea or table)
- 2 large room temperature eggs
- 1/4 cup vegetable oil (or canola or melted coconut oil)
- 1/3 cup sour cream (or substitute with Greek yogurt)
- 1/4 cup white sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla essence
- 1 1/2 cups tightly packed finely grated zucchini
- 1 cup semi-sweet chocolate chips (split for use)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- In a mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix eggs, vegetable oil, sour cream, sugars, and vanilla until smooth.
- Finely grate zucchini and fold it into the wet mixture.
- Combine wet and dry ingredients gently; fold in half of the chocolate chips.
- Pour batter into the prepared loaf pan and top with remaining chocolate chips.
- Bake for about 55 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack.
