Instructions
- Preheat the oven to 375°F.
- In a skillet over medium heat, cook chopped turkey bacon until crispy; set aside.
- In the same skillet, add olive oil if needed and cook diced potatoes until golden brown, about 10 minutes.
- In a mixing bowl, whisk together eggs and cream; season with salt and pepper.
- Pour the egg mixture over cooked potatoes, gently combining ingredients before adding turkey bacon and cheddar cheese.
- Cook on stovetop for about 3 minutes on low heat to set the bottom.
- Transfer to the oven and bake for 15-20 minutes until set in the center.
- Garnish with fresh chives before slicing and serving.
