  • pounds lean stewing beef (cut into 1-inch pieces)
  • 2 large onions (roughly chopped)
  • 5 cloves garlic (minced)
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds (ground)
  • 1 teaspoon dried oregano
  • 3 bay leaves
  • 1 teaspoon brown sugar
  • ½ cup tomato sauce
  • 2 tablespoons balsamic vinegar
  • 4 cups beef broth (no salt added)
  • 2 tablespoons parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over high heat. Sear the beef until browned on all sides; remove and set aside.
  2. In the same pot, reduce heat and cook onions and garlic until softened.
  3. Add sweet paprika, ground caraway seeds, oregano, bay leaves, and brown sugar; stir for about 30 seconds until fragrant.
  4. Pour in tomato sauce, balsamic vinegar, and beef broth; mix well.
  5. Return the seared beef to the pot, bring to a boil then reduce heat to low and simmer covered for about 2 hours until tender.
  6. Adjust seasoning as needed before serving garnished with fresh parsley.
