Ingredients
- 4 tablespoons olive oil
- 2½ pounds lean stewing beef (cut into 1-inch pieces)
- 2 large onions (roughly chopped)
- 5 cloves garlic (minced)
- 3 tablespoons sweet paprika
- 1 teaspoon caraway seeds (ground)
- 1 teaspoon dried oregano
- 3 bay leaves
- 1 teaspoon brown sugar
- ½ cup tomato sauce
- 2 tablespoons balsamic vinegar
- 4 cups beef broth (no salt added)
- 2 tablespoons parsley (chopped, for garnish)
Instructions
- Heat olive oil in a large skillet or Dutch oven over high heat. Sear the beef until browned on all sides; remove and set aside.
- In the same pot, reduce heat and cook onions and garlic until softened.
- Add sweet paprika, ground caraway seeds, oregano, bay leaves, and brown sugar; stir for about 30 seconds until fragrant.
- Pour in tomato sauce, balsamic vinegar, and beef broth; mix well.
- Return the seared beef to the pot, bring to a boil then reduce heat to low and simmer covered for about 2 hours until tender.
- Adjust seasoning as needed before serving garnished with fresh parsley.
