- 1 cup shelled pistachios (salted or unsalted)
- 2 tablespoons heavy cream
- 3 cups unsalted butter (softened at room temperature)
- 2 teaspoons vanilla extract
- 4 cups confectioner’s sugar
- Green food coloring (optional)
Instructions
- Prepare the pistachio paste by grinding the shelled pistachios in a food processor until finely ground. Add heavy cream and pulse until a smooth paste forms.
- In a stand mixer, beat softened unsalted butter on medium-high speed for 7 to 9 minutes until fluffy and white.
- Mix in the pistachio paste and vanilla extract until well combined.
- Gradually add confectioner’s sugar on low speed until incorporated, then increase to high speed for 3 to 4 minutes until light and fluffy. Adjust color with green food coloring if desired.
- If needed, chill the frosting for 30 minutes before re-beating to achieve fluffiness.
