Instructions
- Season the chicken breasts with salt and pepper.
- Whisk together honey, lime juice, lime zest, and minced garlic to create the glaze.
- In a large frying pan over medium-high heat, cook the chicken for 6-7 minutes per side until golden and fully cooked; brush with glaze during the last two minutes.
- Let the chicken rest before slicing.
- Combine cooked rice, coriander, lime juice, and salt in a bowl.
- Toss avocado slices with lime juice, salt, and pepper.
- Assemble by layering rice, avocado, and chicken using a ring mold for presentation.
- Drizzle remaining glaze around the plate and serve immediately.
