Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Whisk together honey, lime juice, lime zest, and minced garlic to create the glaze.
  3. In a large frying pan over medium-high heat, cook the chicken for 6-7 minutes per side until golden and fully cooked; brush with glaze during the last two minutes.
  4. Let the chicken rest before slicing.
  5. Combine cooked rice, coriander, lime juice, and salt in a bowl.
  6. Toss avocado slices with lime juice, salt, and pepper.
  7. Assemble by layering rice, avocado, and chicken using a ring mold for presentation.
