Ingredients
- 1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tbsp olive oil
- 0.25 cup honey
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1.5 cups jasmine rice
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup cream cheese (softened)
- 0.5 cup grated Parmesan cheese
- 1 tbsp butter
- salt and black pepper (to taste)
- 0.5 tsp garlic powder
- 5 cloves garlic (minced)
- 1 tsp Italian seasoning
- fresh parsley (for garnish)
Instructions
- In a large pot, combine jasmine rice and chicken broth; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder; sear until golden brown (about 12–15 minutes).
- Push chicken to one side of the skillet; add minced garlic and remaining butter to the center. Once fragrant, pour in honey, soy sauce, and apple cider vinegar; stir well and let simmer until thickened (2–3 minutes).
- Stir in heavy cream, mozzarella cheese, cream cheese, and Parmesan cheese into the cooked rice until melted and creamy.
- Serve creamy rice topped with honey garlic chicken bites and garnish with fresh parsley.
