Ingredients
- 2 cups cauliflower florets
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon curry powder
- Salt and pepper to taste
- 4 oz halloumi cheese, sliced
- 1 cup canned chickpeas, rinsed and dried
- 1 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine cauliflower florets, olive oil, honey, curry powder, salt, and pepper. Toss until well-coated.
- Spread seasoned cauliflower on a baking sheet and roast for about 20 minutes until golden brown.
- While roasting, toss chickpeas with paprika, salt, and a bit of oil in another bowl. Spread them on a separate baking sheet or skillet and cook until crispy.
- Heat a grill pan over medium heat. Grill halloumi slices for about 2-3 minutes on each side until golden.
- Arrange roasted cauliflower on a plate; top with grilled halloumi and crunchy chickpeas. Serve warm.
